There are many things that give us energy in the morning. Some of us wake up with a huge cup of coffee, while others prefer a breakfast of cereal with milk or yogurt. That’s me, usually. Others wake up with toasts or bread with honey or jam.
Today, I woke up and decided to fuel my Sunday with a Vegetable smoothie. I am a huge fan of vegetables and I never spend a day without eating three to four portions. But there are times that it's not possible to have bowls of salads with our meals, so there are fantastic ways to take all the benefits from vegetables by creating a drinkable version of them!
Yes, vegetables make great juices and smoothies and are a very easy and tasty way to incorporate them to our everyday routine. “Green” smoothies are also a great way to make your kids (who usually avoid vegetables) consume them.
I absolutely adore beetroots. And October-November are the best months to enjoy them. They have a great deep red color and they bring amazing flavors to the table. Not to tell about the huge health benefits they offer.
Type: You can store the mature raw beetroots for several weeks in the refrigerator as long as you don't peel or wash them. Just cut the leaves and keep them until needed.
Beetroots are packed with essential nutrients such as vitamin C, folic acid, potassium, iron, magnesium and many beneficial phytonutrients. They have been associated with numerous health benefits such as improved blood flow, reduction of blood pressure and increased athletic performance and recovery. Moreover, beetroots seem to benefit medical conditions such as diabetes Type two and dementia.
They have been found to have great antioxidant, anti-inflammatory and detoxification abilities with very few calories and a great taste.
So, let's do this delicious smoothie!
- ½ beetroot raw, peeled
- ½ apple (not peeled)
- ½ cup of spinach leaves or 1 stalk of celery
- 1 small carrot
- 1 cup almond milk
- 1 piece of ginger (5gr) peeled and sliced
- Chop the beet, the apple, the carrot and the celery (if used).
- Add all the ingredients in a blender and mix until smooth. Taste and if you need more sweetness, feel free to add more fruit.
- Serve immediately (you may add some ice-cubes).
