I love veggies! And I love having them in different ways.
Today I'm gonna share with you one of the easiest and most tasty ways i cook them.
You only need fresh ingredients, a home-made sauce and you're gonna get an amazing result!
So, a few days ago, my father brought me the crop of the day from the botany that cultivated and filled the house with colorful organic vegetables.
I used eggplants, zucchinis, peppers and mushrooms, but of course you can use your own favorites. Please get organic veggies because they do not contain chemicals.
So I cut them in pieces and spread them in a pan.
I used our merlot Mesolongi salt with pepper corns and oregano that is ideal for grilled cooking and offers that extra flavour that is needed to make the taste explode!
I used my hands to mix the salt with the veggies and I placed the pan in the oven.
I baked them at 180 degrees fahrenheit until they turned gold.
and during that time, I made the sauce, which is probably the most important part in this recipe!
- 9 tablespoons of organic extra virgin olive oil
- 3 tablespoons of organic balsamic vinegar
- 1 tablespoons of organic fir honey
- 1 clove of garlic (you can add more if you want a more intense taste )
Blend the ingredients until they become smooth and creamy.
Take the veggies out of the oven and while they are still hot blend them with the sauce.
And voila! They're ready! You can have them as a salad or as a main dish by adding some cheese and crackers.
