Here's a good idea for a light, healthy and summer meal!
During hot summer days i'ts very important to keep our body hydrated and prefer meals which are light and healthy, in order not to feel “heavy”.
Marinate and bake a salmon fillet with lemon, pepper and coriander and eat it with a fresh salad. Grilled salmon has a high content of healthy fats (Ω-3 and Ω-6 fatty acids) that help us maintain the levels of HDL-cholesterol, but also reduce the levels of LDL-cholesterol, protecting our heart health. In addition, salmon is a fish rich in iron, vitamin B12 and has anti-inflammatory properties.
Choose seasonal organic vegetables, such as cherry tomatoes, cucumber and carrots, fresh and delicious and supply your body with minerals and vitamins. You should not forget that salads offer, beyond the hydration, insoluble fibers , which are essential for the right function of the digestive system. Always prefer organic vegetables to avoid all the chemical that are usually used in the conventional cultivation.
Tomatoes, which are very low in calories, have a high content in potassium, vitamins B and vitamin C, the most antioxidant vitamin.
Cucumber also offers many benefits to our health. It is rich in water, vitamins B, vitamin C, phosphorus, potassium, iron and folic acid. It has very few calories and must have its own place in our salads.
Radish, is a miraculous vegetable with a high content in vitamin C and insoluble fibers that, together, offer a diuretic and antioxidant effect in our body.
Last, but not least, carrots, apart from helping our tanning process by producing melanin, are also rich in vitamin A, that help improve the health of our eyes and our skin, since vitamin A acts as a strong antioxidant.
You may add some organic extra virgin olive oil in your salad, in order to multiply its health benefits and a pinch of Mesolongi fleur de sel to rocket the flavor! Enjoy!
