Τα τελευταία χρόνια η φήμη τους έχει εξαπλωθεί στη Δύση, αν και έχουμε μακρά ιστορία σαν πιάτο της Ανατολής!

The bao buns ή baozi είναι κινέζικα αφράτα ψωμάκια γεμιστά με διάφορα υλικά. Είναι σχεδόν ολοστρόγγυλα, μαγειρεύονται στον ατμό και η γέμισή τους ποικίλει. Στην Κίνα τα bao buns είναι διάσημο street food, μιας και τρώγονται εύκολα στο χέρι, ενώ αποτελούν και αναπόσπαστο κομμάτι του τυπικού κινέζικου πρωινού/brunch.

Αυτά τα ελαφριά και ατμιστά ψωμάκια έχουν μια ουδέτερη γεύση και είναι ιδανικά για υπέροχους συνδυασμούς, είτε αλμυρούς , είτε γλυκούς που θα σας κλέψουν την καρδιά.

Η δική μας συνταγή συνδυάζει τη γλύκα των καραμελωμένων μήλων με την αλμυράδα του χαλουμιού και την τραγανή υφή των ξηρών καρπών και το αποτέλεσμα είναι μοναδικό. Ιδανικά για brunch και για βραδιές με φίλους στο σπίτι.

Για να τα φτιάξετε θα χρειαστείτε: (για 10 bao buns)

• 5 μήλα κόκκινα
• 1,5 κούπα λευκό κρασί
• 4 κ.σ. μέλι
• χυμό από 1 λεμόνι
• 3 φύλα δάφνης
• 2 ξυλάκια κανέλας
• 30 gr σταφίδα
• olive oil - αλάτι - πιπέρι
• 50 gr κάσιους
• 50 gr καρύδια
• 50 gr κολοκυθόσπορο
• 10 ψωμάκια ατμού
• 500 γρ χαλούμι (περίπου 50 γρ στο κάθε ψωμάκι)

Preparation:

Κόβουμε τα μήλα σε χοντρές φέτες με τη φλούδα και τα βάζουμε σε μια κατσαρόλα.

Προσθέτουμε στην κατσαρόλα το κρασί με το μέλι, τα φύλα δάφνης, την κανέλα, το χυμό λεμονιού, 2 κ.σ. ελαιόλαδο, αλάτι, πιπέρι.

Σκεπάζουμε την κατσαρόλα και το αφήνουμε μέχρι να πάρει βράση σε δυνατή φωτιά και στη συνέχεια το χαμηλώνουμε. Θέλει περίπου 25 με 30 λεπτά. Το αφήνουμε σκεπασμένο σε όλη τη διάρκεια. Στο τελευταίο 10 λεπτό προσθέτουμε τις σταφίδες.

Σε ένα ταψάκι ψήνουμε τους ξηρούς καρπούς για 8 με 10 λεπτά στους 170 βαθμούς.

Κόβουμε το χαλούμι σε φέτες και το ψήνουμε σε σχάρα ή σε αντικολλητικό τηγάνι με ελάχιστο ελαιόλαδο.

Βάζουμε τα ψωμάκια ατμού στα μικροκύματα για 30 δευτερόλεπτα (χωρίς μεμβράνη).

Στήσιμο Πιάτου:

Ανοίγουμε τα ψωμάκια ατμού και γεμίζουμε με φέτες μήλου, χαλούμι και ξηρούς καρπούς.

Από το ζουμί που έχει μείνει στην κατσαρόλα περιχύνουμε τα ψωμάκια εσωτερικά.

On a slice of bread we combine healthy and tasty ingredients that satisfy the appetite and our eyes with the result!

Below you will find 2 such options that we are sure will be excited.

In the first recipe we have made an amazing mustard-tahini and in the second we have combined salmon with orange for a unique result!

Open Sandwich with avocado and mustard with tahini

For each slice we will need:

• 1 whole slice bread slice
• 50 gr avocado
• 1 and so on mustard
• 1 / 2 and so on tahini
• 1 egg
• lemon
• 1c biological olive oil
• some fleur de sel
• pepper

Bake the slice of bread on foil, oven, 180 for 7 minutes.

At the same time, mix the mustard with tahini and olive oil and stir well to homogenize the mixture. Also put the egg to boil and cut it in the middle. If we want to be broth, let it boil 3 minutes and place it in the open sandwich.

With a fork, melt the avocado and remove the slices of bread from the oven.

On the slice of bread spread the avocado, over the mustard sauce, the egg and salty pepper. In serving, we can squeeze a few more drops of organic olive oil for more flavor.

For each slice we will need:

• 1 whole slice bread slice
• 30 gr cream cheese
• 1 et al. chia seeds
• 2 baby spinach leaves
• 25 gr salmon smoked
• 8 gr orange peel or orange jam
• chia seeds
• some fleur de sel
• pepper

Soak 2 and so on with the chia seeds and leave 20 minutes to create the characteristic gel. Once this is done, mix the gel with the cream cheese and stir well, adding a little bit of salt and pepper for more flavor.

Remove the bread from the oven and spread the cream cheese. top the leaves of spinach, the slices of smoked salmon and top with the orange pepper.

Execution for homemade mayonnaise
